Skin a zucchini and slice the meat thinly, or use a spiralizer, do the same with a carrot or two.
For the alfredo:
- Take 1/2C cashews and soak in water for 20 mins and then rinse
- Add 1T miso paste
- 1T nutritional yeast
- 1/3C almond milk
- 1/3C water (or less if you like it thicker)
- juice of 1/2 lemon
- dash of nutmeg
- 1 clove garlic
- dash of thyme
Add all the alfredo ingredients to your food processor. Process and scrape down the sides, then cover your zoodles in the sauce, add some basil, s&p and enjoy!
