Spicy roasted chickpeas make a great addition to any salad or as a snack on their own.
- 1C chickpeas
- 1T olive oil
- 1/8 to 1/4t of cayenne pepper depending on how much spice you want
- 1/4t of cumin and
- Dash of salt and pepper
Preheat your oven to 400 degrees. Take your can of chickpeas, rinse them and pat them dry. Put them in a bowl and add the olive oil, cayenne pepper, cumin and salt & pepper. Mix well and then add to your parchment lined pan and spread them evenly around.
Bake for 35-40 minutes flipping part way through, let cool and enjoy!
