I've really been into granola lately but wanted to make my own version so I could control the sugars and oils that went into it. This was really delicious and pretty quick to make. Preheat your oven to 300 degrees and get your ingredients prepared.
You will need:
- 2C oats (old fashioned is best for this)
- 1/2C pumpkin seeds
- 1/2C shredded coconut
- 1/2C raisins, craisins, cherries or dried apricots, blueberries etc.
- 1/2C finely chopped nuts (I used walnuts and pecans)
- 2T coconut oil
- 2T maple syrup, agave
- 1T vanilla extract
- optional topping once cooled: chocolate chips
To get those good granola like clumps, I recommend mixing the maple syrup and coconut oil separately and then adding them to the mix. Mix all the other ingredients in a bowl and then add the maple syrup, coconut oil in and toss together by hand. Lay on a parchment lined pan and cook for 10-15 minutes or until nicely browned. Let cool for 10 minutes and then enjoy!
