Who doesn't love a good pudding first thing in the morning? I know I do! Chia seeds are nutrient dense, loaded with antioxidants, fibre and protein.
I've included the total quantity of ingredients below but you'll want to halve them to make two separate batches. Combine the chia seeds, milk, vanilla and sweetener in a bowl or air tight container, put in the fridge and let sit. It will thicken up in about 15-20 minutes. If you like a thinner consistency simply add more milk, up to you! Do the same in a separate bowl for the chocolate one and add your cocoa powder. Enjoy with some cut up fruit. Easy, right?
- 1C chia seeds
- 2C almond milk
- 2t vanilla extract
- 1/2C sweetener (agave or maple syrup)
- 1/4C cocoa powder (only for the chocolate version)
