I love oatmeal, but sometimes all the prep work that's required to get all the ingredients together can be cumbersome. That's why this overnight slow cooker recipe is so great. It has all the ingredients to make it a well-rounded meal. Prepare it all at night and it's hot and ready for you in the morning.
- 2C slow steel cut oats
- 2.5C almond milk (unsweetened)
- 1C water
- 2 carrots, julienned or
- 1t cinnamon (or more, depending on taste)
- 1C chopped pineapple (recommend fresh but unsweetened canned will work too)
- 1/3C maple syrup
- 1t vanilla
- dash of salt
Combine them all in the slow cooker and put on low for the shortest hours your slow cooker allows. When you're ready to eat it, top with more cinnamon, a dash of maple syrup and crushed nuts. Enjoy!
