These apricot coconut energy balls were super easy to make and are mad delicious.
- 1C dried apricots (make sure they're plump, or soak them in water for 15 minutes to plump them up)
- 1/2C dried shredded coconut
- 1T coconut oil
- 1/2C almond meal
- dash of salt
Take all the ingredients and put them in your food processor, blend until you have an even consistency. Roll into balls and then roll in shredded coconut. Store in the fridge in an airtight container.
