This salad bowl is great for lunches on the go. Make a large batch of brown rice on Sunday night and it will easily be enough rice for lunches Monday-Wednesday.
Take 1C cooked brown rice & add your fresh spinach to the bowl, you can also grate in beets and carrots.
Put the bowl in the microwave for 40 seconds. Top with other veggies, a protein & toss with your dressing.
I used the goddess dressing by simply natural, filling and delicious!
