Yam latkes and cripsy baked brussel sprouts for breakfast this am.
- 1-2 yams, peeled and grated
- 2 eggs
- 2T sliced green onion
Mix it all together and
Brussel sprouts were de-stemmed and tossed in olive oil and S&P. I even included the little pieces that fell off because the char is tasty.
Then I baked them in the oven at 350 degrees for approximately 25 minutes flipping half way. Yummy and filling.
