ooooy gooey chocolatey protein bites anyone?
- 1C pitted medjool dates (I soaked mine for 10 minutes)
- 1/3C raw cocoa powder
- 1/2C walnuts
- 1/2C pecans (almonds would work too)
- 1/3C coconut flakes
- 1/2t of vanilla
- dash of cinnamon
- pinch of sea salt
I didn't have any almond butter, but it really creates a fudge like texture so you could add some if that's what you're after.
Put all the ingredients in a food processor or vitamix, scraping down the sides as you go. Blend until smooth.
Scoop out dough on parchment paper and flatten it out into a square. Top with coconut flakes and goji berries and pop in the fridge for two hours. Chop it up and store in an airtight container, will last for 5-7 days.
