I had wanted to make these for a while. Mostly because my mother is obsessed with snickers, but also because I've been seeing versions of these everywhere. Here's how I made mine:
chocolate layer (for the top and bottom of the snickers):
- 1/3C cocoa powder
- 1/2C coconut oil
- 6-8T agave or other sweetener
- 1/4C almond milk
If your coconut oil isn't in its liquid form, give it a nudge with a little heat over a stove top. Then mix all the other ingredients in. Layer half of the chocolate in your pan, muffin liners or whatever you are using to make your snickers. Place in the fridge or freezer to set while you make the rest of the layers.
- 1/4C soaked raw cashews
- 2T coconut flour
- 2T almond flour
- 1-2T coconut oil
- 1-2T agave or other sweetener
- 1T almond milk
Blend the ingredients in your food processor until it all sticks together. Press on the chocolate layer and pop in the fridge or freezer. Top with chopped peanuts or almonds.
- 1/4C almond butter or peanut butter (I did a mixture of both)
- 1/4C dates (soaked to soften them up)
- dash of salt & vanilla
- a tiny bit of water that I soaked the dates in - roughly 2T
Mix it all together in the food processor or vitamix until it forms a good, even consistency, then place it on top of the nougat. I was low on dates or I would have doubled up this layer.
Once set, add your last layer of chocolate, put in the fridge or freezer and off you go!
