This cracked salad is super good and really easy to make, all you need is an oven!
- 4C kale - de-stemmed and chopped or ripped into small pieces
- 1 head of cauliflower, chopped up
- 2C brussel sprouts, de-stemmed & cut in half
- red cabbage
- 1 lemon
- 1T olive oil
- dash of parmesan
Preheat your oven to 350 degrees. Take your kale and massage it in olive oil until it's well coated, squeeze the lemon on it and then top with S&P. Let sit while you chop up the other veggies, this helps break down the toughness of the kale. Put the brussel sprouts and cauliflower on an oven tray and coat in olive oil and S&P. Pop the two trays in the oven, flipping the veggies after 20 minutes (keep an eye on the kale as it cooks faster). Once done, take the veggies trays out of the oven and let cool, then top with your parmesan, lemon, capers, red chilis and chopped up red cabbage. Enjoy!
