Vanilla Bean Coconut Butter Cups with Chocolate Peanut Butter filling.
- 1C coconut butter, melted
- 1 vanilla bean seeds scraped
- 2T extra virgin coconut oil, melted
- 1T warmed honey/maple syrup, or pure cane sugar
- 1/2C natural creamy peanut butter
- 1 1/2T cocoa powder
- 1T maple syrup warmed
- pinch of salt
Layer the cup in a lined muffin tin, add filling and top with more cup. Put in the freezer for at least an hour or until they harden and enjoy!
