Gluten-free, vegan brownies that were SUPER moist and delicious. The secret ingredient to light, fluffy brownies? Black beans. You can't even taste them and they are packed full of protein, fiber, folate and iron. So why not turn them into delectable brownies?
- 3/4C rinsed black beans and put them in the food processor
- 3 flax eggs (1T ground flax mixed with 3T warm water, whisked and set in the fridge for 10 min)
- 5T olive oil
- 3/4C raw sugar
- 1/2C cocoa powder
- 1/2C almond meal
- 1t vanilla
- 1/2t baking powder
Preheat your oven to 350 degrees, mix all the ingredients in the food processor and blend until smooth. Then hand mix in 3/4C chopped dark chocolate, coconut flakes or nuts.
Add the mix to your brownie or muffin tin lined with parchment paper. Cook for approximately 30 minutes or until a toothpick comes out clean.
