These raw carrot cake energy balls were inspired by the raw carrot cake I love so much. Enjoy them anytime of day. For those who don't eat nuts, simply omit the walnuts.
- 1C chopped carrots
- 3/4C oats
- 1/2C dates
- 1/2C dried pineapple
- 1/2C shredded coconut
- 1/2C of walnuts
- dash of cinnamon and vanilla.
Mix all the ingredients in the food processor until it all sticks together. Then roll into balls and coat in coconut flakes and stick in the fridge to chill.
