These chewy filing cookies are healthy and guilt-free. You can store them in the fridge in an airtight container for about a week. Enjoy them for dessert, breakfast, post workout, you name it!
- 1C almond flour
- 1C oat flour (blend up oats in your vitamix or high powered blender until they reach a powder like texture)
- 3T peanut butter
- 3T agave or maple syrup
- dash of vanilla and cinnamon
Mix all the ingredients together in a bowl until they reach an even consistency and then roll into bite-sized balls. Place the balls on parchment paper and give them an indent with your thumb. Put them in the fridge to set.
For the jam: boil down a container of raspberries (or cherries, or whatever berry you like), then add 2T chia seeds & 2T agave syrup and let simmer for a few minutes, stirring constantly. Once cooled I added some vanilla and then added the jam to the top of the cookies.
