Happy Canadian thanksgiving weekend! Turkey dinner isn't the only time you can indulge, start the day off right with a protein filled and delicious pancake breakfast.
- ½C almond flour
- 2T coconut flour
- 1T ground flax seed
- 2T vanilla protein powder (I used vega vanilla chai)
- pinch of salt
- ½T cinnamon
- 1T pumpkin pie spice (don't have it? Make your own)
- ¼T baking soda
- ½C pumpkin puree
- ¾C egg whites (or 3 eggs)
- 2T honey or maple syrup
- ½t vanilla extract
Fry up your pancakes in coconut oil. This made three medium sized pancakes for me, they were really filling and delicious, I was only able to eat half.
