While I don't eat chicken anymore, this is a great recipe for those who want a low carb, gluten-free dinner option.
Take a chicken breast and marinate it in orange & lime juice. You can then fry it whole (no oil needed), just keep adding lime juice to keep it moist while it cooks through.
At the same time, fry up finely diced garlic and ginger and then add your pepper and broccoli - and whatever other veg you like.
For the cauliflower rice, take a head of cauliflower, chop it up up and throw in the food processor until it creates a rice like substance. Don't have a food processor? You can also grate the cauliflower on a cheese grater. Then add to your veggies, chop up the cooked chicken breast and add some tamari and hot sauce. Enjoy!
