Enjoy these oatmeal pumpkin muffins on a busy morning and throughout the day for nutrient packed fuel. They're full of good fats, healthy carbs and they taste delicious.
- 1 can pumpkin
- 1/3C almond butter
- 1T olive oil
- 3C oats (pulverize them in the blender first)
- 2T flour
- 1/4C egg whites
- 1/2C maple syrup
- 2t baking soda
- Dash of pumpkin spice, cinnamon, nutmeg and salt
- Crushed nuts optional
Pre-heat your oven to 350 degrees and line your muffin cups with parchment paper or olive oil.
Mix the ingredients together in a bowl and add to your muffin tin, makes approximately 8-10 muffins. Bake for 20-25 minutes or when your toothpick comes out clean. Cool and enjoy.
Each muffin is under 300 calories.
